This diploma is a science-based introduction to how the body uses food. It begins with the three energy-yielding macronutrients — carbohydrates, proteins and lipids — and the workings of the digestive system, then goes deeper into each: the groups of carbohydrates, the main types of amino acids and how proteins are synthesised and structured, and the roles of fatty acids and the compounds derived from them. Later modules trace the metabolic pathways for carbohydrates, lipids and proteins, survey vitamins and minerals such as vitamin C, vitamin E and selenium, and explain the structure and function of antioxidants.
Alison rates the course Beginner Level and lists an average duration of 10 to 15 hours; it is self-paced, CPD-accredited and available in English and Spanish, with assessments through the course. Studying is free in full. The Alison Diploma at the end is an optional paid item in digital or printed form, with a free Learner Record available as an alternative record of completion.
